摘 要:壳寡糖主要以壳聚糖为原料,经生物酶解加工而成,具有分子量小、聚合度低、水溶性好等特点,分子量小于3000 Da的壳寡糖很容易通过肠道代谢被肠上皮吸收,具有多种生物功能活性。该文就小分子量的壳寡糖在调节肠道菌群、提高免疫力、抗肿瘤、保护肝脏、降尿酸、降血糖等方面的功能活性进行综述,对小于3000 Da分子量壳寡糖的功能活性进行比较分析,并充分探究不同分子量和聚合度的壳寡糖的作用机制,结合目前壳寡糖的应用现状,分析壳寡糖未来的发展趋势,为壳寡糖在食品等领域的广泛应用提供参考。Chitooligosaccharide,mainly derived from chitosan,is processed through enzymatic hydrolysis.It has the characteristics of small molecular weight,low polymerization degree,and good water solubility.A chitooligosaccharide with a molecular weight of less than 3000 Da is easily absorbed by the intestinal epithelium through intestinal metabolism and possesses various biological functions.This article overviewed the functional activities of chitooligosaccharide with low molecular weight in regulating the intestinal microbiota,enhancing immune function,resisting tumors,protecting the liver,and reducing uric acid and blood sugar,compared and analyzed the functional activities of chitooligosaccharide with molecular weights less than 3000 Da,and thoroughly explored the mechanisms of chitooligosaccharide with different molecular weights and polymerization degrees.By combining the current application status of chitooligosaccharide,the future development trends of chi-tooligosaccharide were predicted,providing references for its extensive application in food and other related fields.
