摘 要:鲜食甜玉米是一类含糖量高、风味独特的玉米品种,具有加工成玉米天然风味饮料的潜力。以鲜食甜玉米为原料,通过喷雾干燥工艺制备鲜食甜玉米天然风味固体饮料,研究对比6种鲜食甜玉米品种加工成玉米汁后的风味和营养品质,从中筛选出‘雪甜7401’和‘美果1号’两种适宜品种,并根据感官评价与理化指标确定了最佳复配比例为‘雪甜7401’:‘美果1号’=2∶1,最佳磨浆料液比为1∶2。以出粉率为指标,通过单因素试验确定喷雾干燥最佳工艺为辅料(麦芽糊精)添加量8%、进风温度210℃、进料速度6.0 m L∕min、分散剂(二氧化硅)添加量1.2%。该工艺制得的鲜食甜玉米天然风味固体饮料出粉率为52.6%,产品呈淡黄色细腻粉末状,溶于温水后有浓郁玉米香味,味道香甜。Fresh sweet maize is a kind of maize variety with high sugar content and unique flavor,which has the potential to be processed into maize flavor drinks.In this study,fresh sweet maize was used as raw material to prepare natural flavor solid drinks by spray drying process.In this study,the flavor and nutritional quality of 6 fresh sweet maize varieties processed into juice were compared,and two suitable varieties‘Xuetian 7401’and‘Meiguo 1’were selected.According to sensory evaluation and physicochemical indexes,the optimal compounding ratio was‘Xuetian 7401’∶‘Meiguo 1’=2∶1,and the optimal grout liquid ratio was 1∶2.Taking the yield of powder as an index,the optimal process of spray drying was determined by single factor experiment as additive content of excipients(maltodextrin)8%,inlet air temperature 210℃,feed rate 6.0 mL∕min and additive content of dispersant(silica)1.2%.The powder yield of the fresh sweet maize natural flavor solid drink prepared by this process was 52.6%,and the product was light yellow and fine powder.After dissolving in warm water,it had a strong maize flavor and sweet taste.
