摘 要:为探究不同区域西湖龙井茶香气物质的差异,采用顶空固相微萃取与气相色谱-质谱联用技术,分析不同区域西湖龙井茶挥发性物质的全组分。结果显示:10个不同区域茶样中鉴定出44种共有的香气物质,主要有烯烃类(14种)、醇类(13种)、酯类(7种)、醛类(5种)、酮类(2种)、吡嗪(2种)和醚类(1种),其中不同区域茶样中香气物质含量差异达到极显著水平(P<0.01)和显著水平(P<0.05)的各有10种。选取10个地域茶样中共有的44种香气物质,利用SIMCA(14.1)软件进行主成分分析,结果显示:前4种主成分的累计解释率为76.4%,同时将茶样分为四大区域,其中双峰、灵隐一组,梅家坞、翁家山、大清谷一组,茅家埠、九溪、龙坞、杨梅岭为一组,龙井为一组,对区域分组贡献较大的物质中芳樟醇、柠檬烯、香叶烯、γ-萜品烯的含量存在极显著差异,4-松油醇、苯乙醛、2-丁基-1-辛醇、癸醛、α-松油醇、(E)-β-法尼烯、Z-己酸-3-己烯酯的含量存在显著差异。In order to explore the differences in the aroma substances of West Lake Longjing tea in different regions,the whole volatile substance components of West Lake Longjing tea were studied by combining headspace solid phase micro-extraction and gas chromatography-mass spectrometry.The results show that ten different regions of tea samples identified 44 kinds of common aroma substances,include olefins(14),alcohols(13),esters(7),aldehydes(5),ketones(2),pyrazine(2)and ethers(1),among which the content of aroma substances in different regional tea samples reached a significant level(P<0.01)and 10 significant levels(P<0.05).Select a total of 44 aroma substances from 10 regional tea samples,principal component analysis using SIMCA(14.1)software.The cumulative interpretation rate of the top 4 principal components was 76.4%.At the same time,the tea samples are divided into four major regions,Shuangfeng and Lingyin for a group,Meijiawu,Wengjiashan,Daqing Valley for a group,Maojiabu,Jiuxi,Longwu,Yangmei Ling for a group,and Longjing is an another group.The contents of linalool,limonene,geranylanyene,andγ-terpene were highly different in the substances that contributed significantly to the regional grouping.There were significant differences in the contents of 4-pineol,phenylacetaldehyde,2-butyl-1-octanol,decaldehyde,α-parthenol,(E)-β-farnesene,and Z-proproate-3-hexenyl ester.
