摘 要:该研究从酱香白酒下沙出窖酒醅中筛选出4株酿酒酵母(SC-T、SC-W、SC-J和BD-2),其中BD-2为布拉迪酵母菌(Saccharomyces boulardii)。BD-2耐酸性和耐高温性研究表明,该菌株可在pH2.5的条件下生长,同时在50℃处理条件下的存活率为70%。通过幽门螺杆菌抑制试验得出,BD-2对幽门螺杆菌具有一定的抑制活性,与四联药物联用对幽门螺杆菌具有较好的抑制作用。对BD-2益生特性进行研究,在2.0%胆盐含量下的存活率为72.2%,在模拟人工胃液和肠液中的存活率分别为194%和79%。此外,BD-2的抗氧化试验结果表明,菌株具有较强的还原能力、清除羟自由基和1,1-二苯基-2-三硝基苯肼(1,1-Diphenyl-2-picrylhydrazyl,DPPH)自由基能力,分别为62.40%、34.69%和73.27%,并且BD-2的自凝聚性和疏水性较强。通过抗生素敏感性试验得出,BD-2耐药性较强。综上所述,筛选得到的布拉迪酵母菌BD-2具有优良的益生特性和潜在的应用前景。In this study,four strains of Saccharomyces cerevisiae(SC-T,SC-W,SC-J and BD-2)were screened from unloading pit fermented grains of sauce-flavor liquor,of which BD-2 was Saccharomyces boulardii.Studies on the acid and high temperature resistance of BD-2 showed that the strain can grow at pH 2.5,and the survival rate was 70%at 50℃.According to the inhibition experiment of Helicobacter pylori,BD-2 has a certain inhibitory activity on H.pylori,and it has a good inhibitory effect on H.pylori when combined with four drugs.The prebiotic properties of BD-2 were studied.The results showed that the survival rate of BD-2 was 72.2%with 2.0%bile salt content,and in simulated artificial gastric juice and intestinal fluid was 194%and 79%,respectively.In addition,the antioxidant test results of BD-2 showed that the strain had strong reducing ability,hydroxyl radical scavenging ability,and free radical scavenging ability of 1,1-diphenyl-2-picrylhydrazyl(DPPH),which were 62.40%,34.69%and 73.27%,respectively.Moreover,the hydrophobicity and autoaggregation of BD-2 was strong.Through antibiotic sensitivity test,it was concluded that BD-2 had strong drug resistance.In summary,the yeast BD-2 screened has excellent probiotic properties and potential application prospects.
