摘  要:为研究喷施1-甲基环丙烯(1-Methylcyclopropene,1-MCP)处理对物流运输后水培油菜货架品质和生理变化的影响,对物流运输后水培油菜常温货架和冷藏5 d后常温货架期的感官指标、营养指标、生理指标、衰老指标进行测定。设置喷施4μL/L 1-MCP为1-MCP处理组,喷施蒸馏水为CK组。对于常温货架期贮藏方式,相较于CK组,1-MCP处理水培油菜后,其失重率降低、色差更小,同时延缓了维生素C、还原糖、可溶性蛋白含量以及色素(叶绿素a、叶绿素b和类胡萝卜素)含量的下降,降低呼吸速率和乙烯生成速率,延缓相对电导率、丙二醛的上升。而对于冷藏5 d后常温货架贮藏方式,1-MCP处理后除了对失重率及呼吸速率无明显影响外,其他指标的变化趋势与常温货架贮藏组相同。另外通过对比2种不同贮藏方式发现,在贮藏后期冷藏处理与常温货架相比除了丙二醛含量更高外,其余指标的含量都更低。同时,对比2种贮藏环境下1-MCP处理组发现,冷藏后维生素C、还原糖、可溶性蛋白含量、呼吸强度以及乙烯生成速率更低,失重率更高。综上所述,1-MCP可以延缓黄化及软化,维持各营养物质含量,同时还能抑制呼吸强度,减少乙烯释放量,并有效抑制相对电导率和丙二醛的升高,延长货架期。In order to investigate the effects of 1-Methylcyclopropene(1-MCP)spraying on the shelf quality and physiological changes of hydroponic oilseed rape after transportation,sensory,nutritional,physiological and senescence indices were measured during the shelf life at room temperature and after 5 d of refrigeration.A spray of 4μL/L 1-MCP was set as the 1-MCP treatment group and a spray of distilled water was set as the CK group.Compared with the CK group,the 1-MCP treatment of hydroponic oilseed rape reduced weight loss and colour difference,delayed the decrease of vitamin C,reducing sugars,soluble protein content and pigments(chlorophyll a,chlorophyll b and carotenoids),reduced respiration rate and ethylene production rate,and delayed the increase of relative conductivity and malondialdehyde for storage at room temperature.For storage at ambient shelf after 5 d of refrigeration,the 1-MCP treatment showed the same trend as the ambient shelf storage group,except for no significant effect on weight loss and respiration rate.In addition,when comparing the two storage methods,it was found that the levels of other indexes were lower after refrigeration compared to ambient shelf storage,except for the higher levels of malondialdehyde.Also,comparing the 1-MCP treatment groups in both storage environments,it was found that vitamin C,reducing sugars,soluble protein content,respiratory intensity and ethylene production rate were lower and weight loss rate was higher after refrigeration.In conclusion,1-MCP delayed yellowing and softening,maintained the content of various nutrients,and also inhibited respiratory intensity,reduced ethylene release,effectively suppressed the increase of relative conductivity and malondialdehyde,and extended the shelf life.
