摘 要:为了解武汉地区高校食堂的供餐营养水平,以武汉地区30个高校食堂为调查对象,就其食物供应、烹饪制作、营养服务、就餐环境等方面,采用清单法结合实地观察法开展调研并进行数据统计分析。结果表明,武汉地区高校食堂供餐基本满足学生膳食营养需求,但在深色蔬果等低能量高营养密度食物的供应、国家“三减”政策的落实、引导学生合理膳食养成良好饮食习惯方面还存在不足,有待进一步完善。In order to understand the nutritional level of meals served in college canteens in Wuhan,30 college canteens in Wuhan area were taken as survey objects,and the list-survey-method was combined with field observation method to carry out research on their food supply,cooking,nutrition services,dining environment,etc.The results showed that the food supply of college canteens in Wuhan can basically meet the dietary nutritional needs of students.However,there are still deficiencies in the supply of low energy and high nutrient density foods such as dark vegetables and fruits,the implementation of the national“three reductions”policy,and the guidance of students to develop good eating habits with reasonable meals,which need to be further improved.
