摘 要:香柚营养丰富,含有类黄酮、精油、柠檬苦素类化合物等多种活性成分,具有抗氧化、抗炎、抗血小板聚集及抗肥胖等生理功能。香柚不仅可以用于生产果汁、果茶、果酱等初加工食品,而且其活性成分在医药等领域具有巨大的应用及商业潜力。目前,香柚的深加工产品较少,生物活性成分利用率不高,因此,对其活性成分和生理功能的研究具有重要意义。笔者就香柚的营养成分、活性成分及生理功能的研究进行综述,为香柚资源的进一步开发利用提供参考。Yuzu(Citrus junos Siebo.ex Tanaka)is rich in nutrients,including flavonoids,essential oils,limonoids and many other active ingredients.It possesses physiological functions including antioxidant,anti-inflammatory,anti-platelet aggregation,anti-obesity and so on.Yuzu is not only used for the production of primary processed foods like juices,fruit teas,and jams,but also holds significant application and commercial potential for its active ingredients in the field of medicine and beyond.Currently,there are relatively few deep-processed products of yuzu,and the utilization of its bioactive components is limited.Therefore,the researchon its active ingredients and physiological function is of great significance.In this context,the author provides an overview of the nutritional components,active ingredients,and physiological functions of yuzu,offering insights for the further development and utilization of yuzu resources.
