摘 要:为利用阻抗快速、无损检测大黄鱼品质,测定其冰藏期间5种频率(2、5、20、50 kHz和100 kHz)的阻抗、关键组分(蛋白质、脂肪、水分)及鲜度指标(色差、p H值、水分活度、汁液流失率、菌落总数)的变化,并建立特定频率阻抗与品质的函数预测模型。结果表明,大黄鱼肌肉不同频率阻抗在冰藏期间均呈先快速上升(0-24 h)后缓慢下降趋势;组分均呈下降趋势;水分活度呈先快速上升(0-24 h)后基本不变;色差L*值不断下降、b*值呈上升趋势;p H值呈先降低(0-24h)后升高趋势;汁液流失率和菌落总数不断上升。2 kHz或100 kHz等特定频率阻抗与品质指标均存在显著的函数关系(P<0.05,r=0.889-0.988),经验证试验证明了预测模型的准确性(P<0.05,r=0.841-0.961)。因此,阻抗技术可实现鱼体品质的快速、准确、无损检测。In order to detect quality of Larimichthys crocea rapidly and non-destructively by bio-impedance,we measured changes in bio-impedance(frequency 2,5,20,50,100 kHz),key components(protein,fat,moisture)and freshness(color difference,pH,water activity,drip loss,total bacterial colony)of muscle during ice storage,function prediction model of specific frequency impedance and quality indices were established.The results suggest that bio-impedance of sample at different frequencies showed a trend of rapid increase(0~24 h)followed by a slow decrease during storage;decreased trend of components;water activity increased rapidly(0~24 h)and remained unchanged;color difference L* value decreased continuously,and b* value showed a slow upward trend;pH value decreased(O-24 h)and then increased;drip loss and total bacterial colony showed an increasing trend.There was a significant functional relationship between specific frequency impedance and quality indices(P<0.05,r=0.889-0.988).It's proved that the accuracy of the function prediction model is high(P<0.05,r=0.841-0.961).Therefore,bio-impedance can realize rapid,accurate and non-destructive detection of quality.
