摘　　要：作为小畜种、大产业的兔肉业,在前端生产环节养殖周期短,效益回收快,中端依托加工与贮运,后端有庞大的消费群体和市场支撑,能够有效带动一、二、三产业融合发展,因此成为乡村振兴和地方经济发展的主要抓手,而加工是打通和有效衔接全产业链最为关键的环节。我国目前兔肉加工、生产和消费都居于世界前列,加工环节也不断取得新进展,持续的技术研发和产品开发为产业提供了强有力的支撑,但仍然存在加工集中度低,工业标准化不足,技术和产品研发滞后,梯度加工和副产综合利用不充分,难以满足兔业总体发展和产品市场日益增长的需求。未来的发展趋势,加工将以“大而强,小而精,特而美”为特色,更加凸显在全产业中的引领作用。Rabbit is a"microlivestock"species compared to other farm animals.However,the rabbit meat industry is considered as a basis to drive the integration and development of the primary,secondary,and tertiary industry,and which is therefore promising in terms of rural revitalization.Rabbits have a short life cycle,rapid growth rate and notable performance responses.Furthermore,technological advancements of rabbit meat processing and storage transportation,and a large group of consumers and markets are driving the industry,and the meat processing plays a key role during this industry.At present,China is the biggest rabbit meat production,processing,and consumption globally,and advances in meat processing technologies pave the way for improving the industry efficiency.However,more centralized processing and industrial standardization are delayed,new products development and gradient processing and comprehensive utilization of by-products is still insufficient.It is difficult to meet the overall development of the rabbit industry and the growing demand of the products in market.The future development trend of rabbit meat processing will be characterized by"large and strong,small but dapper,unique and special",highlighting its leading role in the entire industry.
