摘 要:目的:对2018—2020年福建省水产品的食品安全情况及风险趋势进行分析。方法:运用卡方检验,对福建省市场监督管理局2018—2020年水产品省本级监督抽检结果进行分析。结果:2018年抽检水产品1657批次,其中不合格17批次,不合格率为1.03%,总体安全质量情况较好;2019年抽检水产品1951批次,其中不合格93批次,不合格率为4.77%,多为兽药残留不合格,重金属方面镉的不合格率也比较高;2020年抽检水产品3750批次,其中不合格68批次,不合格率为1.81%,不合格项目与2019年的不合格项目重叠率较高,水产品总体安全情况转好。结论:福建省水产品中硝基呋喃类和恩诺沙星的滥用问题较为突出,重金属镉的不合格率也相对较高,相关部门应加强硝基呋喃类、恩诺沙星类兽药的监控以及镉污染的治理,并针对性调整抽样场所和抽样比例。Objective:To analyze the food safety situation and risk trends of aquatic products in Fujian province from 2018 to 2020.Method:Using chi-square test,the results of provincial-level supervision and sampling inspection of aquatic products by Fujian Provincial Market Supervision Administration in 2018—2020 were analyzed.Result:1657 batches of aquatic products were sampled in 2018,of which 17 batches were unqualified,with a failure rate of 1.03%,and the overall safety and quality situation was better;1951 batches of aquatic products were sampled in 2019,of which 93 batches were unqualified,with a failure rate of 4.77%,mostly unqualified in veterinary drug residues,and the failure rate of cadmium in terms of heavy metals was relatively high;3750 aquatic products were sampled in 2020 batches,of which 68 batches are unqualified,the failure rate is 1.81%,the unqualified items and the unqualified items in 2019 have a high overlap rate,and the overall safety of aquatic products has turned for the better.Conclusion:The abuse of nitrofurans and enrofloxacin in aquatic products in Fujian province is more prominent,and the failure rate of cadmium,a heavy metal,is also relatively high.The relevant departments should strengthen the monitoring of nitrofurans and enrofloxacin veterinary drugs as well as cadmium contamination,and make targeted adjustments to the sampling places and sampling ratios.
