摘 要:阪崎肠杆菌可感染婴幼儿,引发脑膜炎、菌血症和坏死性小肠结肠炎。因此,探究出快速、灵敏、高效的阪崎肠杆菌检测方法对于保障食品质量安全至关重要。目前,阪崎肠杆菌的检测方法中比较常见的是分离鉴定法、分子生物学检测技术和免疫学检测法。分离鉴定法易于操作、成本低,但检测周期长,无法满足对目标食品快速检测的需求;分子生物学检测技术是一种高灵敏度和特异性的检测手段,但是由于其对检测人员要求高,所需设备和试剂价格昂贵,目前多在实验室进行,不适用于现场检测;免疫学检测方法简单快捷,适用于现场快速检验,但容易受到其他杂菌的影响,敏感性较低。本文综述了分离鉴定法、分子生物学检测技术、免疫学检测技术等多种阪崎肠杆菌的检测方法,结合参考文献就检测研究进展予以分析,以期为食品中阪崎肠杆菌的快速检测方法研究提供参考。Trace amounts of E.sakazakii can infect newborns and young children,causing meningitis,septicaemia and necrotising small bowel colitis,among others.Therefore,exploring a rapid,sensitive and efficient detection method for E.sakazakii is essential for ensuring food quality and safety.At present,conventional isolation and identification,molecular biology and immunological detection methods for E.sakazakii are more common.The separation and identification method is easy to operate and low cost,but the detection cycle is long,which can not meet the demand for rapid detection of target food.Molecular biotechnology is a highly sensitive and specific means of detection,but due to its high demand for test technicians,the required equipment and reagents are expensive,and is currently mostly carried out in the laboratory,is not suitable for on-site testing.The method of immunological determination is simple and fast,which is suitable for field rapid detection,but it is easy to be interfered with other miscellaneous bacteria and its sensitivity is not high enough.In this paper,separation and identification method,molecular biological detection techniques,immunological detection techniques and other detection methods of E.sakazakii were reviewed,and the research progress of detection was analyzed in combination with references,in order to provide reference for the rapid detection of E.sakazakii in food.
