摘 要:为了解黑龙江省东部地区大米的矿物质含量情况,本文采用微波消解-电感耦合等离子体质谱法测定佳木斯市、伊春市、七台河市、鹤岗市和双鸭山市230份大米中K、Na、Ca、Mg、Mn、Fe、Cu和Zn 8种矿物质元素含量,采用营养质量指数法对大米中矿物质元素进行营养评价。结果显示,大米中8种矿物质元素含量普遍为K、Mg、Ca元素含量较高,Zn次之。常量元素中Na元素平均含量最低,微量元素中Zn元素平均含量最高;鹤岗市、双鸭山市、七台河市大米中Mn、Cu、Zn 3种矿物质元素的INQ值均大于1。黑龙江省东部地区大米中矿物质元素K、Mg、Ca、Zn较为丰富,鹤岗市、双鸭山市、七台河市大米在能量满足人体需要的同时,可作为良好的矿物质来源。本研究可为当地居民均衡膳食营养提供参考,为大米矿物质的质量标准制定和监测提供数据支撑。To understand the mineral content of rice in the eastern region of Heilongjiang province,this study used microwave digestion inductively coupled plasma mass spectrometry to determine the content of K,Na,Ca,Mg,Mn,Fe,Cu,and Zn in 230 rice samples from Jiamusi city,Yichun city,Qitaihe city,Hegang city,and Shuangyashan city.The nutritional quality index method was used to evaluate the mineral elements in rice.The results showed that the content of 8 mineral elements in rice is generally higher in K,Mg,and Ca,followed by Zn.The average content of Na element is the lowest among constant elements,while the average content of Zn element is the highest among trace elements;the INQ values of Mn,Cu,and Zn in rice from Hegang city,Shuangyashan city,and Qitaihe city are all greater than 1.The mineral elements K,Mg,Ca,and Zn are relatively abundant in rice in the eastern region of Heilongjiang province.Rice from Hegang city,Shuangyashan city,and Qitaihe city can serve as a good source of minerals while meeting human energy needs.This study can provide reference for the balanced dietary nutrition of local residents,and provide data support for the formulation and monitoring of quality standards for rice minerals.
