食品工程专业课程“三体”式工程伦理教育模式探析——以“酿造酒工艺学”为例

摘　　要：在大部分高校的食品工程专业中都缺少工程伦理教育,单独设置一门工程伦理课程并不是一个有效的解决办法。在食品工程专业课程中,以“酿造酒工艺学”为例,从体现、到体会、再到体验“三体”式层层递进,开展融入工程伦理教育模式探索。课程设计中“体现”工程伦理,对课程任务中的伦理教育有了更严格的要求;一体化教学“体会”工程伦理,对老师的职业素质要求有了新的定义;实习实训“体验”工程伦理,对学生亲身经历体验社会伦理责任感有了完整的验证和诠释。“三体”式逐层加深,实现了将工程伦理教育渗透到食品专业课程中。Taking"brewing technology"as an example,from the embodiment,experience,experience"three-body"style,to carry out the exploration of integrating engineering ethics education mode.The"embodiment"of engineering ethics in curriculum design has more stringent requirements for ethical education in curriculum tasks;The integration of teaching"experience"engineering ethics has a new definition of the teacher's professional quality requirements;The"experience"of engineering ethics in the practice training provides a complete verification and interpretation of students'personal experience of social ethical responsibility.The"three-body"style was deepened layer by layer,and the engineering ethics education is infiltrated into the food professional curriculum.
