摘  要:目的:调查了解桃胶在人群中的食用情况,为列入新资源食品后制定每日推荐食用量、食用方法、不适宜人群提供参考依据。方法:选取从事桃胶种植、购销群体和随机整群抽样调查两组群体,通过实地走访、现场问卷调查,统计了解桃胶食用情况。结果:共收集有效问卷710份,来自5个省9个地市,其中桃胶种植和购销群体中,收集了254份有效问卷,桃胶食用率96.85%,食用年限最长的为15年,食用1~5年的占57.48%,6~10年的占23.62%,11~15年的占15.75%。平均食用量22.70 g·d^(-1),食用方式上80.49%以搭配其他食物煲汤为主;随机抽样群体共收集了456份有效问卷,桃胶食用率29.39%,食用1~5年的占13.60%,6~10年的占11.62%,11~15年的占4.17%,平均食用量4.38 g·d^(-1)。食用者中主动食用占83.58%,来源依次为自采、商贩、超市、网店,被动食用占19.40%,来源依次为馈赠、桌餐。77.61%食用感受良好,22.39%食用感受尚可。经统计分析,从事桃胶种植和购销群体的食用率、食用量、食用年限明显高于随机抽样群体。结论:桃胶食用人群广,食用历史悠久,食用方式多样,通过食用历史调查和考证,食用安全性高,支持将桃胶作为食品使用,推荐成人每日食用量为30 g左右,食用方式主要以做汤、粥、羹、甜品、炒菜为主。Objective:To investigate the consumption of peach gum in the population,and to provide reference basis for formulating daily recommended consumption amounts,consumption methods,and unsuitable populations after being included in new resource foods.Method:Select two groups of people engaged in peach gum planting,purchase and sales,and conduct random cluster sampling surveys.Through on-site visits and questionnaire surveys,statistically understand the consumption of peach gum.Result:A total of 710 valid questionnaires were collected from 9 cities in 5 provinces.Among them,254 effective questionnaires were collected from peach gum planting and purchasing groups.The consumption rate of peach gum was 96.85%,and the longest consumption period was 15 years,57.48%were consumed for 1~5 years,23.62%for 6~10 years,and 15.75%for 11~15 years.The average consumption of peach gum was 22.70 g·d^(-1),80.49%of them used to make soup with other food.456 people were surveyed by random sampling,the consumption rate of peach gum was 29.39%,13.60%of them used peach gum for 1~5 years,11.62%in 6~10 years,4.17%in 11~15 years,average consumption 4.38 g·d^(-1).Among the consumers,83.58%were active eating,the sources were self-collection,vendors,supermarkets and online stores,19.40%were passive eating,the sources were gifts and table meals.77.61%had a good eating experience,while 22.39%had a decent eating experience.Through statistical analysis,the consumption rate,consumption amount and years of peach gum planting and purchasing groups were obviously higher than those of random sampling groups.Conclusion:Peach gum has a wide consumer base,a long history of consumption,and diverse ways of consumption.Through investigation and research on the consumption history,it has been found that it is safe to consume,which supports the use of peach gum as a food,recommended daily consumption of adults for about 30 grams,eating mainly to do soup,porridge,soup,dessert,stir-fry mainly.
