摘  要:呕吐毒素是由真菌中的镰刀菌种类产生的一种B型单端孢霉菌毒素,广泛存在于被污染的谷类中,通过农产品和动物饲料对人类和动物健康造成严重损害,如引起组织病变、氧化和繁殖性能及免疫系统受损等。因此,研究食品和饲料中呕吐毒素的脱除技术成为了近年来研究的热点。文章综述了呕吐毒素的危害及其物理、化学和生物脱除方法,并重点围绕微生物法和酶法脱毒展开论述,以期为呕吐毒素脱毒技术开发和产品创制提供理论参考。Deoxynivalenol is a type B single terminal fungal toxin produced by the Fusarium species in fungi.It is widely present in cereal pollutants and causes serious damage to human and animal health through agricultural products and animal feed,such as tissue damage,oxidative damage,immune system damage,reproductive performance damage,etc.Therefore,the research on the removal technology of deoxynivalenol in food and feed has been a hot topic in recent years.This article reviewed the hazards of devomiting toxin and their physical,chemical,and biological removal methods,with a focus on microbial and enzymatic detoxification,so as to provide theoretical reference for the development of deoxynivalenol detoxification technology and product creation.
