摘  要:阐述了“回马上甑”的由来,以清香型白酒为例分析了“回马上甑”在白酒蒸馏工艺中的优势。从理论上解析了“窝窝甑”的“凹度”概念和意义,及其对控制“甑边效应”的重要性和必要性。对机器上甑进行了现状分析,指出“回马上甑”是端甑工艺的最高境界,是机器上甑的“指南针”。The paper expounded the origin of"Huima-loading distilling-pot".The advantage of"Huima-loading distilling-pot"in distilling process of Bajiu was illustrated by taking Qingxiangxing Baijiu as an example.The concept and significance of"concavity degree"of"Wowo distilling-pot"were analyzed theoretically,and the importance and necessity for controling boundary effects.The present situation of mechanical distilling-pot was analyzed.It was pointed out that the"Huima-loading distilling-pot"was the highest state of the distilling-pot technology and the compass of the mechanical distilling-pot.
