摘  要:保鲜包装是果蔬在贮运过程中保持优良品质、预防机械损伤的重要手段之一,其作用机制主要是降低果蔬自身的呼吸作用、蒸腾作用,抑制病原微生物的侵害,提高果蔬品质,延长货架期。本文综述了气调包装、涂膜包装、活性包装、纳米包装等不同保鲜包装对采后果蔬品质和贮藏特性的影响,旨在为采后果蔬的保鲜提供参考。Fresh-keeping packaging is one of the essential means to maintain the high quality of fruits and vegetables during storage and transportation,as well as to prevent mechanical damage.Its main mechanism is to reduce the respiration and transpiration of fruits and vegetables,inhibit the invasion of pathogenic microorganisms,improve the quality of fruits and vegetables,and extend the shelf life.This article reviewed the effects of various fresh-keeping packaging methods,including modified atmosphere packaging,film packaging,active packaging and nanotechnology packaging on the quality and storage characteristics of postharvest fruits and vegetables,aiming to provide insights for the preservation of postharvest fruits and vegetables.
