摘  要:以水分含量、直链淀粉含量、新鲜度值、品尝评分值等为指标,研究了在海南常规储藏条件下储藏12个月,铝塑和塑料复合材料以及编织袋包装大米的品质变化。结果表明:编织袋包装大米水分含量变化幅度大,新鲜度值下降快,储藏半年后已出现生虫、霉变现象。铝塑复合包装对大米品尝评分值的保持效果优于其他包装;短中期储藏,塑料复合包装对延缓大米直链淀粉含量、新鲜度值的变化及对气味的保持效果较好,但较长期储藏,铝塑复合包装优于塑料复合包装。Using moisture content,amylose content,freshness value and taste score as indicators,the quality changes of rice packaged with aluminum-plastic and plastic composite materials and woven bags were studied under conventional storage conditions in Hainan for 12 months.The results showed that the moisture content of rice packaged in woven bag changed greatly,the freshness value decreased rapidly,and the phenomenon of insects and mildew appeared after half a year of storage.Aluminum-plastic composite packaging had better retention effect on rice taste score than other packaging.In short and medium term storage,plastic composite packaging had a better effect on delaying the change of amylose content and freshness value of rice and maintaining the odor,but in longer term storage,aluminum-plastic composite packaging was better than plastic composite packaging.
