摘 要:本文采用紫外分光光度计法来分析食品中亚硝酸钠含量测定的全过程,并对该方法进行不确定度评定。通过分析实验全过程影响食品中亚硝酸盐含量测定的各种因素,包括称量、定容、标准溶液配制、标准曲线拟合以及测量的重复性等,识别、评估实验过程中影响测量结果不确定度的主要原因。结果显示,食品中亚硝酸盐含量为(1.000±0.133)mg·kg^(-1)。In this paper,the whole process of determination of sodium nitrite in food was analyzed by ultraviolet spectrophotometer,and the uncertainty of the method was evaluated.By analyzing the various factors affecting the determination of nitrite content in food during the whole process of the experiment,including weighing,constant volume,dilution of standard solution,standard curve fitting and repeatability of measurement,the main reasons affecting the uncertainty of measurement results during the experiment were identified and evaluated.The results showed that the nitrite content in food was(1.000±0.133)mg·kg^(-1).
