摘 要:为实现清香型白酒大曲理化指标的快速检测,结合清香型白酒大曲制作工艺和相关大曲检测标准的要求,运用近红外光谱技术,建立了清香型白酒大曲水分、糖化力和液化力的快速检测模型。结果表明:通过筛选不同光谱预处理方法和波数范围,运用偏最小二乘法(PLS)建立模型,使用内部交叉验证得到最优模型,各理化指标模型的相关系数(R2)值大于0.75线性良好,交叉验证均方根(RMSECV)预测误差较小。使用盲样对大曲各指标的模型进行外部验证,水分、糖化力和液化力的相对标准偏差分别为3.61%、5.07%和5.84%,符合生产检测的需求,可运用于清香型白酒大曲的日常检测分析。In order to realize the rapid detection of physical and chemical indexes of Fen flavor liquor Daqu,combined with the requirements of Fen flavor liquor Daqu production technology and related Daqu detection standards,a rapid detection model of moisture,saccharifying power and liquefying power of Fen flavor liquor Daqu was established by using near infrared spectroscopy technology.The results showed that:by screening different spectral preprocessing methods and wave number range,the partial least squares(PLS)method was used to establish the model,and the internal cross validation was used to obtain the optimal model.The correlation coefficient(R2)value of each physical and chemical index model was greater than 0.75,with good linearity,and the root mean square prediction error of cross validation(RMSECV)was small.The relative standard deviations of moisture,saccharifying power and liquefying power were 3.61%,5.07%and 5.84%,respectively,which met the needs of production testing,and could be applied to the daily detection and analysis of Fen flavor liquor Daqu.
