摘  要:研究的主要目的是筛选发酵性能较为可靠的工业酿酒酵母,通过选用环境适应能力较强的工业酿酒酵母来控制发酵成本,提高工业生产的经济效益。将在生产线中被分离出的工业酿酒酵母作为研究菌株,主要采取实验室进化和基因组改造等方式对耐受能力较强的酿酒酵母菌株进行筛选。之后采取摇瓶验证的措施来验证其发酵性能,研究发现其中S.CD 12的发酵性能较为突出,与对照菌株相比,在工业物料中的发酵性能更好,为能进一步检验其发酵性能,针对其在不同工业物料中的发酵性能表现进行验证和综合评估。The main purpose of this study is to screen industrial Saccharomyces cerevisiae with relatively reliable fermentation performance,and to control fermentation costs and improve the economic benefits of industrial production by selecting industrial Saccharomyces cerevisiae with strong environmental adaptability.Here,industrial Saccharomyces cerevisiae isolated from the production line was used as the research object.Saccharomyces cerevisiae strains with strong tolerance were screened mainly through laboratory evolution and genome modification.Subsequently,shaking flask fermentation was used to verify their fermentation performance.Among the selected strains,the strain S.CD 12 was found with more prominent fermentation performance,and compared with the control strain,it has better fermentation performance when industrial materials were used.To further test the fermentation performance of S.CD12,different industrial materials were used and its performance was verified and comprehensively evaluated.
