摘  要:膳食纤维是甘薯主要生理活性因子之一,具有改善消化系统中的菌群、调节血脂及促进新陈代谢等多种功效,对维持人体健康有着极其重要的作用。因此,如何更有效地利用、开发甘薯膳食纤维是当前迫切需要解决的科学难题。为了进一步加快甘薯膳食纤维的有效利用及拓宽其在食用工业中的应用范围,促进甘薯产业的持续健康发展。对甘薯膳食纤维的分类、制备方法及特性进行了阐述,就如何对甘薯渣膳食纤维的高值化利用进行了展望,以期为甘薯膳食纤维的开发应用提供理论支持。Dietary fiber was one of the main physiological active factors in sweet potatoes,which has various effects such as improving the microbial community in the digestive system,regulating blood lipids,and promoting metabolism.It plays an extremely important role in maintaining human health。Therefore,how to use and develop sweet potato dietary fiber more effectively was an urgent scientific problem to be solved at present.In order to further accelerate the effective utilization of sweet potato dietary fiber and broaden its application scope in edible industry,and promote the sustainable and healthy development of sweet potato industry.The article elaborated on the classification,preparation methods,and characteristics of sweet potato dietary fiber.Finally,it looked forward to the high-value utilization of sweet potato residue dietary fiber,in order to provide theoretical support for the development and application of sweet potato dietary fiber.
