摘 要:【目的】为进一步探究含笑花在不同天气情况下挥发性物质差异。【方法】以含笑花为试验材料,利用顶空固相微萃取结合气相色谱-质谱联用技术,测定含笑花花被片在晴天和阴天的挥发性物质,并进行香气强度(OAV)分析。【结果】在含笑花花被片中共检测到45种挥发性物质,以倍半萜类化合物(18种)和酯类化合物(11种)为主,其中在晴天和阴天时分别检测到37和33种挥发性物质,且在晴天的含量(106.07μg/kg)显著高于阴天(53.50μg/kg);共有19种挥发性物质是主要成分,其中β-榄香烯的含量在晴天和阴天时均最高(35.52和26.62μg/kg),乙酸异丁酯、2-甲基丙酸乙酯、己酸乙酯和己酸异丁酯等4种成分的含量在晴天时明显高于阴天,异丁醇、3,7(11)-蛇床二烯酮、γ-芹子烯、乙酸乙酯和2-甲基丁酸乙酯等5种成分在阴天未检测到。OAV分析表明,含笑花花被片的特征香气成分有6种,其中乙酸异丁酯和2-甲基丙酸乙酯在晴天时的OAV分别高达646.00和69.60,且明显高于阴天,而阴天时β-榄香烯的OAV最大。【结论】含笑花在晴天和阴天时的挥发性物质种类、含量和OAV都存在明显差异,其中β-榄香烯、乙酸异丁酯和2-甲基丙酸乙酯等化合物含量的差异是造成两种天气含笑花花香不同的主要原因。【Objective】 In order to further explore the differences in volatile components of Michelia figo under different weather conditions. 【Method】 In this study,we used Michelia figo as the experimental material,headspace solid phase microextraction combined with gas chromatography-mass spectrometry was used to determine the difference of volatile substances on sunny and cloudy days,and the aroma intensity( OAV) was analyzed.【Result】 A total of 45 volatile compounds were detected in the tepals of Michelia figo,mainly including sesquiterpenes(18 types) and esters(11 types). Among them,37 and 33 volatile compounds were detected on sunny and cloudy days,respectively,and the volatile content on sunny days(106.07 μg/kg) was significantly higher than that on cloudy days(53.50 μg/kg). There were 19 main components in these volatiles,and the content of β-elemene was the highest on sunny and cloudy days(35.52 and 26.62 μg/kg,respectively). The contents of isobutyl acetate,ethyl isobutyrate,ethyl hexanoate and isobutyl caproate on sunny days were significantly higher than those on cloudy days. Isobutanol,Isobutanol,Selina-3,7(11)-diene, γ-Carotene,ethyl acetate,and Ethyl-2-Methylbutyrate were detected on cloudy days. OAV analysis showed that there were six characteristic aroma components in the tepals of Michelia figo. The OAV of isobutyl acetate and ethyl isobutyrate on sunny days were as high as 646.00 and 69.60,respectively,which were significantly higher than those on cloudy days,while the OAV of β-elemene was highest on cloudy days.【Conclusion】 There were significant differences in the number,content and aroma intensity of volatile components in Michelia figo on sunny and cloudy days. Differences in the content of compounds such asβ-elemene, isobutyl acetate,and ethyl isobutyrate were the main reasons for the difference in the floral aroma of the two types of weather.
