摘  要:为评价不同品种蓝莓发酵酒的抗氧化活性,采用芭尔德温、灿烂、梯芙蓝、杰兔、蓝雨、顶峰、园蓝和粉蓝8个品种蓝莓果实酿造蓝莓酒,并对不同品种蓝莓鲜果及其蓝莓酒中的总酚、黄酮有效成分含量与抗氧化活性的相关性进行分析。结果表明,品种园蓝鲜果及其发酵酒中的总酚、黄酮含量最高;抗氧化活性方面,该品种发酵酒对1,1-二苯基-2-三硝基苯肼(DPPH)和2,2-联氮-双-3-乙基苯并二氢噻唑啉-6-磺酸(ABTS)的清除率最高;蓝莓酒中的总酚、黄酮含量与其DPPH和ABTS清除率呈明显正相关关系(P<0.01)。生产上,总酚、黄酮可作为衡量蓝莓酒抗氧化能力的重要成分。To evaluate the antioxidant activity in fermented blueberry wine of different varieties,eight different varieties of blueberry fruits including Baldwin,Brightwell,Tifblue,Premier,Bluerain,Climax,Gardenblue and Powderblue were used to brew blueberry wine.The correlation between the antioxidant activity and polyphenols,flavonoids in different varieties of blueberry fruit and blueberry wine was analyzed.The results showed that the contents of polyphenols and flavonoids of Gardenblue blueberry fruit and wine were the highest,and the clearance rates of 1,1-diphenyl-2-trinitrophenylhydrazine(DPPH)and 2,2-diazo-di-3-ethylbenzodihydrothiazolin-6-sulfonic acid(ABTS)were the highest.The contents of total phenols and flavonoids in blueberry wine were positively correlated with the clearance rates of DPPH and ABTS(P<0.01).Total phenols and flavonoids can be used as important components to evaluate the antioxidant capacity of blueberry wine.
