摘  要:采用固相微萃取(SPME)技术并结合气相色谱-质谱(GC-MS)法对3种香型(花香型、甜香型和烟香型)武夷红茶的香气成分进行检测分析,并对3种香型武夷红茶的香气成分进行比较.3种香型武夷红茶样品香气成分中醇、醛、酸类化合物含量较高.花香型武夷红茶中酯类化合物含量较高为16.05%,甜香型武夷红茶中醇类化合物含量为48.17%、醛类化合物含量为35.9%,烟香型武夷红茶中酸类化合物含量较高为19.25%.在3种香型武夷红茶中,只有花香型武夷红茶含有较高含量的含氮化合物,为11.55%.Solid phase microextraction(SPME)and gas chromatography-mass spectrometry(GC-MS)were used to detect and analyze the aroma components of three kinds of Wuyi black tea(flower,sweet and smoky),and compare the aroma components of three kinds of Wuyi black tea.The contents of alcohol,aldehyde and acid compounds in aroma components of three kinds of Wuyi black tea samples were higher.The content of esters in flower-flavored Wuyi black tea is 16.05%,the content of alcohols and aldehydes in sweet-flavored Wuyi black tea is 48.17%and 35.9%,the content of acid compounds in smoky Wuyi black tea was 19.25%.Among the three kinds of flavor Wuyi black tea,only the flower-flavored Wuyi black tea has a higher content of nitrogen compounds,which is 11.55%.
