摘  要:生物胺是一类具有生物活性含氨基的低分子量有机化合物的总称。水产品富含蛋白质等营养物质,在储存过程中易受到微生物污染产生生物胺。过量摄入生物胺会引起不良反应,从而危害人体健康。本文主要从抑制型电导检测法、脉冲积分安培检测法及串联检测器检测法,介绍了基于不同检测器的水产品生物胺离子色谱法研究概况,以期为建立更加全面检测水产品中生物胺离子色谱法提供参考与借鉴。Biogenic amines are a general term for a class of biologically active,low-molecular-weight organic compounds containing amino groups.Aquatic products are rich in nutrients such as protein,and are susceptible to microbial contamination to produce biogenic amines during storage.Excessive intake of biogenic amines can cause adverse reactions that can endanger human health.Normally,the suppressive conductivity detector,the pulse integral amperometric detector and the series detector are mainly used by the suppressive conductivity detection method.In order to provide reference for the establishment of a more comprehensive detection method of biogenic amines ion chromatography in aquatic products,the research of biogenic amines ion chromatography of aquatic products based on different detectors was introduced.
