摘 要:本研究以自然发酵的紫薯为菌株来源,使用特定培养基从中分离纯化出菌株ZS-1,结合菌落特征、个体形态特征以及分子生物学鉴定确定其为融合魏斯氏菌(Weissella confusa)。通过生长特性分析发现,ZS-1菌株具有稳定的生长状态与良好的产酸能力,该菌株对碳源的要求较低,能有效利用甘露醇、乳糖、麦芽糖和葡萄糖,生存空间大。通过吲哚实验、明胶液化实验、溶血性实验及药敏实验进行安全性分析,结果表明该菌株不具有产生溶胶酶以及分解色氨酸的能力,但存在溶血性,能引起β-溶血现象,不宜在食品领域中进一步应用。ZS-1菌株对多种抗生素表现出敏感性,包括红霉素、四环素、氯霉素、克林霉素、利福平、青霉素、氨苄西林和头孢曲松等,这些抗生素能够有效抑制该菌的生长和繁殖。关于融合魏斯氏菌在食品领域的安全性,目前的研究尚需进一步深化,本研究为未来对融合魏斯氏菌的深入研究与应用提供了宝贵的参考依据。In this study,naturally fermented purple sweet potato was used as the strain source,and strain ZS-1 was isolated and purified from it using a specific culture medium.Combined with colony characteristics,individual morphological characteristics and molecular biological identification,it was determined to be Weissella confusa.Through growth characteristic analysis,it was found that the ZS-1 strain had a stable growth state and good acid production ability.The strain had low requirements for carbon sources,could effectively utilize mannitol,lactose,maltose and glucose,and had a large living space.Safety analysis was carried out through indole test,gelatin liquefaction test,hemolytic test and drug sensitivity test.The results showed that the strain did not have the ability to produce lysozyme and decompose tryptophan,but had hemolyticity and could causeβ-hemolysis,so it was not suitable for further application in the food field.The ZS-1 strain showed sensitivity to a variety of antibiotics,including erythromycin,tetracycline,chloramphenicol,clindamycin,rifampicin,penicillin,ampicillin and ceftriaxone,which could effectively inhibit the growth and reproduction of the bacteria.Regarding the safety of Weissella confusa in the food field,current research needs to be further deepened.This study provides a valuable reference for the in-depth research and application of Weissella confusa in the future.
