摘 要:食源性致病菌是引发食物中毒的重要因素之一,对人类健康构成了严重威胁。食源性致病菌检测是一项非常艰巨的任务。传统生化检测、分子生物学检测等技术不仅费时费力,检测周期长,而且需要昂贵的设备。因此,需要开发一种具有快速、低成本和高灵敏度特性的食源性致病菌传感器检测技术,以此减少食源性疾病的暴发。光电传感器因其具有精度高、响应快、结构简单等优点在食品安全检测领域受到广泛关注。光电传感器是利用材料的光电性质,将光信号转换为电信号,从而实现对特定分析物高灵敏度检测的装置。金属硫化物纳米材料因其优异的光学性能、可调节的发射波长等独特的优点被广泛应用于光电传感器中。本文主要介绍了金属硫化物纳米材料的分类、合成方法以及金属硫化物光电传感器对不同食源性致病菌的检测应用。最后,讨论了该技术在实际应用的挑战和未来展望,为现场快速有效地检测食源性致病菌提供了有价值的参考。Foodborne pathogens constitute a significant hazard to human health,often leading to food poisoning.The detection of these pathogens,however,remains a challenging task.Traditional biochemical and molecular biology detection methods are not only time-consuming and labor-intensive but also rely on costly and bulky equipment,resulting in extended detection cycles.Therefore,the development of rapid,cost-effective,and highly sensitive foodborne pathogen detection sensors represents a new frontier with immense importance in minimizing foodborne disease outbreaks.Photoelectric sensors,owing to their high accuracy,swift response,and straightforward design,have garnered considerable attention in the realm of food safety testing.These sensors harness the photoelectric properties of materials to transform light signals into electrical signals,enabling high-sensitivity detection of specific analytes.Metal sulfide nanomaterials,with their outstanding optical properties,tunable emission wavelengths,and other distinctive advantages,are extensively employed in photoelectric sensors.This article primarily delved into the classification and synthesis methods of metal sulfide nanomaterials,along with their application in detecting various foodborne pathogens using metal sulfide photoelectric sensors.Additionally,it examines the challenges and future prospects of this technology in practical applications,providing invaluable insights for rapid and efficient on-site detection of foodborne pathogens.
