摘　　要：食品安全和品质是关系到国计民生的重要问题。然而,目前传统食品包装材料以单一功能的石油基塑料为主,难以满足消费者对绿色、新鲜和安全的包装的需求。天然植物多酚凭借其独特的抗菌和抗氧化等生物活性,已成为食品科学领域的研究热点之一。因此,本文围绕植物多酚的抗氧化性与抗菌性,阐述植物多酚作为活性物质在食品活性包装体系中的负载形式、提高植物多酚稳定性的有效措施和植物多酚在食品保鲜方面的具体应用,旨在为植物多酚在食品活性包装领域的广泛应用及绿色制造技术的开发提供一定的理论指导。Food safety and quality are important issues related to the national economy and people s livelihood.However,at present,traditional food packaging materials are dominated by the single functional petroleum-based plastics,which are difficult to meet consumers demands for green,fresh and safe packaging materials.Natural plant polyphenols have become one of the research hotspots in the field of food science due to their unique antibacterial and antioxidant activities.Therefore,focusing on the antioxidant and antibacterial properties of plant polyphenols,this paper described the loading forms of plant polyphenols as active substances in the active food packaging systems,the effective measures to improve the stability of plant polyphenols,and the specific applications of plant polyphenols in the food preservation.The aim is to provide some theoretical suggestions for the wide applications of plant polyphenols in the active food packaging fields and the developments of green manufactural technologies.
