摘  要:采用气相色谱-离子迁移谱联用(GC-IMS)技术对菜籽油、牡丹籽油、核桃油、胡麻油、文冠果油、紫苏油、橄榄油等7种功能性油脂中挥发性成分差异进行了对比分析。结果显示,7种功能性油脂共检出46种挥发性成分(成分的单体、二聚体和三聚体仅计算1次),包括10种醛类、9种酯类、8种醇类、7种酮类、5种酸类、2种烯类、5种杂环类;构建挥发性成分指纹图谱,确定了不同功能性油脂中的特征挥发性成分,7种功能性油脂中挥发性成分种类及相对含量差异明显;根据这些挥发性成分差异,利用特征成分指纹图谱和PCA谱图,可很好地区分7种功能性油脂。Gas chromatography-ion mobility spectrometry(GC-IMS)was employed to comparatively analyze the differences in volatile components in seven types of functional lipids:rapeseed oil,peony seed oil,walnut oil,sesame oil,shiny-leaved yellowhorn oil,perilla oil,olive oil.A total of 46 volatile components were identified in the seven functional lipids(counting monomers,dimers,and trimers only once),including 10 aldehydes,9 esters,8 alcohols,7 ketones,5 acids,2 alkenes,and 5 heterocycles.A volatile component fingerprint was established for each lipid to identify their characteristic volatiles.There were significant differences in both types and relative contents of volatile components among the seven functional lipids.Characteristic component fingerprinting and principal component analysis(PCA)spectra were used to effectively distinguish these functional lipids based on these differences in volatile components.
