摘 要:食品添加剂是一类被添加到食物中的化学物质,旨在提升食品的口感、色泽和保护期等特性,已成为现代食品工业中不可或缺的一部分。然而,大量研究显示,使用人工合成的化学物质作为食品添加剂具有潜在的健康风险。食品添加剂可能与哮喘、注意力缺陷多动障碍、心脏病、癌症、肥胖等健康问题密切相关。此外,一些食品添加剂还可能通过干扰机体激素分泌的方式,从而影响生长发育,对儿童健康成长造成不利影响。本文总结了多种食品添加剂如防腐剂、抗氧化剂、着色剂等对机体的损伤作用,从化学物联合作用角度提出需完善食品添加剂的安全性评价,以期为食品安全监管和消费者健康提供科学依据。Food additives are a kind of chemical substances added to food to enhance the taste,color and shelf life of food,and have become an indispensable part of the modern food industry.However,growing researches showed that synthetic chemicals used as food additives can be potentially harmful to health.Some food additives may be closely related to asthma,attention deficit hyperactivity disorder,heart disease,cancer,obesity and other health problems.In addition,some food additives may also interfere with hormone secretion,affect growth and development,and affect the healthy growth of children.This study reviews the damage effects of various food additives,such as preservatives,antioxidants,and colorants on body,and proposes the need to improve the safety evaluation of food additives from the perspective of the combined action of chemicals,in order to provide a scientific basis for food safety supervision and consumer health protection.
