摘 要:目的:研究2016—2021年鄂尔多斯市销售的食品中化学污染物及有害因素的污染情况,发现食品安全隐患,为鄂尔多斯市食品安全风险监测提供科学依据。方法:根据食品安全风险监测的要求,2016—2021年在鄂尔多斯市2区7旗采用随机抽样的方法采集市售食品,根据《国家食品化学污染物及有害因素监测工作手册》中的方法对样品进行检验。结果:6年共检测焙烤类食品、茶与茶制品、谷物与其制品、肉与肉制品、蔬菜与其制品、植物油与其制品、食品接触材料、水果与其制品、乳与乳制品、淀粉类制品和蛋与蛋制品共11类食品样品945份,包含14245个监测项目数据,其中合格率是95.77%,检出率是51.75%,超标率是4.23%;不同采样环节(餐饮、流通、种植和养殖环节)检出率分别是45.00%、49.46%、70.59%和90.00%,定型包装和散装类型检出率分别是51.52%、51.82%。结论:鄂尔多斯市市售食品的化学污染物情况良好,但是部分产品存在不合格现象,应进行改善,加强管理。Objective:To study the pollution of chemical pollutants and harmful factors in food sold in Ordos city from 2016 to 2021,find hidden dangers of food safety,and provide scientific basis for monitoring food safety risk in Ordos city.Method:According to the requirements of food safety risk monitoring,commercial food was collected by random sampling in 2 districts and 7 banners of Ordos city from 2016 to 2021,and the samples were tested according to the methods in the National Manual for Monitoring Chemical Pollutants and Harmful Factors in Food.Result:In 6 years,a total of 945 samples were tested in 11 categories:baked food,tea and tea products,grains and their products,meat and meat products,vegetables and their products,vegetable oils and their products,food contact materials,fruits and their products,milk and dairy products,starch products,eggs and egg products,and 14245 monitoring items data were obtained,of which the pass rate was 95.77%,and the detection rate was 51.75%,the excess rate was 4.23%;The detection rates of different sampling links(catering,circulation,planting and breeding links)were 45.00%,49.46%,70.59%,90.00%,and the detection rates of shaped packaging and bulk types were 51.52%,51.82%.Conclusion:The chemical pollutants in food sold in Ordos city are good,but some products do not meet the standard,so we should pay more attention to them and strengthen management.
