摘  要:杂粮是指除大米和小麦以外的具有营养和药理价值的功能性食品.其营养价值丰富,具有许多生理功能.杂粮能够为人体提供膳食纤维、维生素、矿物质和蛋白质等多种必需营养素,具有调节血糖、降血脂、预防癌症、促进肠道健康、提高免疫力等功效.因此,杂粮在食品工业中发挥着至关重要的作用.随着经济的发展,人们的生活质量不断提高,生活节奏不断加快,方便快捷地从食物中获取营养成为了重点,即食代餐食品应用而生.同时在当今健康饮食和健康零食的发展下,以及农村市场的拓展和科技创新的推动下,即食杂粮食品发展前景广阔.Coarse cereals are functional foods with nutritional and pharmacological values,except rice and wheat.Coarse grains are rich in nutritional value and have many physiological functions.Coarse cereals can provide the human body with essential nutrients such as dietary fiber,vitamins,minerals,and proteins.They can regulate blood glucose,lower blood lipids,prevent cancer,promote intestinal health,and improve immunity.Therefore,coarse cereals play a vital role in the food industry.With the development of economy,people's quality of life has been continuously improved,the pace of life has been accelerated,and getting nutrition from food conveniently and quickly has become the focus.The application of instant meal replacement food is born.They have broad development prospects due to the trend of healthy diet,the popularity of healthy snacks,the demand of the catering market,the expansion of the rural market,and the promotion of scientific and technological innovation.
