摘　　要：食品安全是关系国计民生的重大问题,食品添加剂在改善食品品质等方面发挥着重要作用,但不合理使用可能给消费者健康带来风险。本文系统阐述了食品添加剂的分类与用途、安全性指标以及检测技术等,重点介绍了高效液相色谱法、气相色谱法、质谱法、原子吸收光谱法等分析技术在食品添加剂检测中的应用,以及相应的注意事项。通过合理选择检测方案,规范操作流程,建立完善的质量管理体系,可为食品添加剂的科学评估与有效监管提供必要的技术支撑,最大限度保障食品安全。Food safety is a major issue related to the national economy and people's livelihood,food additives play an important role in improving food quality,but improper use may pose risks to consumer health.This article systematically elaborates on the classification and use,safety indicators,and detection techniques of food additives,focuses on the application of analytical techniques such as high-performance liquid chromatography,gas chromatography,mass spectrometry,and atomic absorption spectroscopy in the detection of food additives,as well as corresponding precautions.By selecting appropriate testing plans,standardizing operational procedures,and establishing a comprehensive quality management system,necessary technical support can be provided for the scientific evaluation and effective supervision of food additives,ensuring maximum food safety.
