摘  要:随着全球人口的增长和食品供应链的日益复杂,食品安全问题愈发受到国际社会的关注。食品微生物污染可能导致食源性疾病,威胁消费者的生命健康,是食品安全领域的重大挑战之一。因此,对食品中微生物进行快速、准确的检测与鉴定,对于确保食品安全、维护公共卫生具有重要意义。本文探讨了食品中微生物快速检测与鉴定技术的研发与应用,为食品安全领域的研究和实践提供参考。With the growth of the global population and the increasing complexity of the food supply chain,food safety issues have received increasing attention from the international community.Microbial contamination of food may cause foodborne diseases and threaten the life and health of consumers,which is one of the major challenges in the field of food safety.Therefore,rapid and accurate detection and identification of microorganisms in food is of great significance for ensuring food safety and maintaining public health.This article discusses the development and application of rapid detection and identification technology of microorganisms in food,providing a reference for research and practice in the field of food safety.
