摘 要:食品安全是关系国计民生的重大问题,而食品检测是确保食品安全的关键。然而,由于食品基质的复杂性和检测技术的多样性,食品检测的准确性难以得到保证。本文系统分析了影响食品检测准确性的因素,包括样品前处理过程的标准化程度、检测仪器性能的稳定性与灵敏度以及检测方法的特异性与重现性。在此基础上,提出了优化样品前处理流程、定期校准检测仪器以及开发新型高特异性检测方法等对策建议,以期为提升食品检测水平、保障食品安全提供参考。Food safety is a major issue related to the national economy and people’s livelihood,and food testing is the key to ensuring food safety.However,due to the complexity of food matrices and the diversity of detection techniques,the accuracy of food testing is difficult to guarantee.This article systematically analyzes the factors that affect the accuracy of food testing,including the standardization level of sample pretreatment process,the stability and sensitivity of detection instrument performance,and the specificity and reproducibility of detection methods.On this basis,suggestions were put forward to optimize the sample pretreatment process,regularly calibrate detection instruments,and develop new highly specific detection methods,in order to provide reference for improving the level of food testing and ensuring food safety.
