摘 要:快速检测食品中活病原菌的能力对于公共卫生和食品安全原因非常重要。在食品中各种成分、保存环境、烹饪方式等各种因素的影响下,某些活的病原菌可进入可存活但不可培养(VBNC)状态,导致传统培养方法无法有效检测。VBNC状态下病原菌的检测可分为诱导培养法和非培养检测法。诱导培养需要针对不同种类的细菌提供个性化诱导方案;非培养检测手段较多,包括核酸检测、流式细胞技术、噬菌体检测、生物传感器检测、基因测序等,这些方法在检测速度、灵敏度和成本方面各具优势。本文综述了近年来VBNC状态下病原菌最新的检测方法及其特点,并讨论了它们的局限性和未来前景,为VBNC食源性病原菌的检测提供参考。The ability to rapidly detect live pathogens in food is crucial for public health and food safety reasons.Various factors such as food composition, storage conditions, and cooking methods can lead to certain live pathogens entering a viable but nonculturable state(VBNC),making traditional culture methods ineffective for detection.Detection of pathogens in the VBNC state can be achieved through induced culture methods and non-culture detection methods.Induced culture requires personalized induction protocols for different types of bacteria, while non-culture detection methods are diverse, including nucleic acid detection, flow cytometry, phage detection, biosensor detection, and gene sequencing.These methods have their own advantages in terms of detection speed, sensitivity, and cost.This review summarizes the latest detection methods and characteristics of pathogens in the VBNC state in recent years, discusses their limitations and future prospects, and provides reference for the detection of VBNC foodborne pathogens.
