摘  要:乙偶姻是一种重要的化学合成中间体和多功能材料,广泛应用于食品、烟草、制药、化工、酿酒等领域。传统生产乙偶姻的方法主要是化学方法。随着乙偶姻应用范围的拓展及产量的不足,传统方法已无法满足市场需求,而微生物转化产乙偶姻具有效率高、污染小等符合绿色发展的优点,并符合天然香精的食用安全要求。冬虫夏草是国内传统名贵药材,在食品、药物等方面有着广泛的应用。而实际工艺生产中会产生大量的冬虫夏草料渣无法利用,冬虫夏草料渣中葡萄糖的含量为7.11%~7.51%,需要进一步降解与利用,发挥更大的价值。利用微生物转化法生产含有乙偶姻的冬虫夏草料渣发酵液,有利于拓展冬虫夏草料渣的应用领域,进一步提高冬虫夏草料渣的价值,赋予冬虫夏草料渣相关产品具有独特的奶甜香气风味特征。Acetoin is an important chemical synthesis intermediate and multi-functional material,widely used in food,tobacco,pharmaceutical,chemical,wine and other fields.The traditional method of producing acetoin is mainly chemical.With the expansion of the application range of acetoin and the shortage of production,the traditional method has gradually failed to meet the market demand,and the microbial transformation to produce acetoin has the advantages of high efficiency,low pollution and other green development,and meets the edible safety requirements of natural flavors.Cordyceps sinensis is a traditional and precious medicinal material in China,which is widely used in food and medicine.However,a large amount of cordyceps residue can be produced in the actual process production,and the glucose content in the cordyceps residue is about 7.11%~7.51%,which is in great need of further degradation and utilization to play a greater value.The fermentation solution of cordyceps sinensis residue containing ethoin by microbial conversion was beneficial to expand the application field of cordyceps sinensis residue,further improve the value of cordyceps sinensis residue,and gave cordyceps sinensis residue related products with unique milk sweet aroma and flavor characteristics.
