摘  要:随着科技不断演进,数据驱动的人工智能方法在白酒行业得到广泛应用。本文系统回顾了这些方法在白酒生产、鉴别和勾调方面的研究进展。在生产领域,借助计算机视觉和神经网络技术,成功应用于酒醅温度预测、智能摘酒以及白酒发酵等工艺流程,显著提升了生产效率和产品品质。鉴别方面,采用神经网络等技术进行基酒质量等级判断、酱香酒轮次与工艺分析、基酒等级判别和基酒酒龄识别,有效提高了鉴别准确性。至于白酒勾调,通过神经网络构建智能白酒勾调网络系统,通过算法优化确定最佳白酒勾兑配方,显著提升了勾兑成功率并降低了勾兑成本。这一综合研究为白酒行业的智能化发展提供了深入而全面的洞见。With the continuous evolution of technology,data-driven artificial intelligence methods have found widespread applications across various domains,and the Baijiu industry is no exception.This paper comprehensively reviews the research progress of data-driven artificial intelligence methods in areas such as Baijiu production,identification,and blending.In the realm of production,the application of computer vision and neural network technologies in processes such as predicting the temperature of fermentation mash,intelligent picking of Baijiu ingredients,and Baijiu fermentation has significantly enhanced production efficiency and product quality.In the domain of identification,techniques like neural networks are employed for grading the quality of base liquor,analyzing the rounds and processes of sauce-fragrance Baijiu,discriminating base liquor grades,and identifying the age of base liquor,effectively improving identification accuracy.Concerning Baijiu blending,an intelligent Baijiu blending network system is constructed using neural networks,determining optimal Baijiu blending formulations through algorithmic optimization,thereby increasing blending success rates and reducing blending costs.This comprehensive exploration provides in-depth and holistic insights into the intelligent development of the Baijiu industry.
