摘 要:试验旨在讨论不同屠宰体重对三元杂交猪(杜×长×大)屠宰性能及胴体品质的影响。选择同一饲养环境下的去势公猪,按照屠宰体重分为4组:110 kg(G1组)、125 kg(G2组)、140 kg(G3组)、150 kg(G4组),共计16头猪。结果表明:1)屠宰性能:G4组胴体直长、胴体斜长、头重均显著高于G1组(P<0.05);G3背膘厚显著高于G1组和G4组(P<0.05);G3组及G4组板油重显著高于G1和G2(P<0.05);对其他指标无显著性影响(P>0.05)。2)胴体品质:G3组肉色评分(德、美)和大理石纹评分显著高于其他三组(P<0.05);G4组滴水损失显著高于G1组(P<0.05);G2组嫩度显著高于G4组(P<0.05)。综上,屠宰体重110~150 kg的三元杂交猪在屠宰指标及胴体品质上差异显著。140~150 kg的屠宰体重对肉色、纹理和外观有积极影响,但150 kg的屠宰体重会增加滴水损失;125 kg的屠宰体重可能在嫩度上表现更佳。适宜的屠宰体重为125~140 kg。The experiment aims to discuss the effects of different slaughter weights on the slaughter performance and carcass quality of ternary hybrid pigs(Duroc×Landrace×Large white).Select castrated male pigs from the same feeding environment and divide them into 4 groups based on slaughter weight of 110 kg(G1 group),125 kg(G2 group),140 kg(G3 group),and 150 kg(G4 group),totaling 16 pigs.The results showed that:1)Slaughtering performance:The straight length,diagonal length of carcass,and head weight of the G4 group were significantly higher than those of the G1 group(P<0.05);The backfat thickness of G3 group was significantly higher than that of G1 group and G4 group(P<0.05);The plate oil weight of G3 and G4 groups was significantly higher than that of G1 and G2(P<0.05);There was no significant impact on other indicators(P>0.05).2)Carcass quality:The G3 group had significantly higher meat color scores(German,American)and marble texture scores than the other three groups(P<0.05);The drip loss of G4 group was significantly higher than that of G1 group(P<0.05);The tenderness of G2 group was significantly higher than that of G4 group(P<0.05).Overall,there are significant differences in slaughter indicators and carcass quality among ternary hybrid pigs with slaughter weights ranging from 110 to 150 kg.A slaughter weight of 140-150 kg has a positive impact on meat color,texture,and appearance,but 150 kg increases drip loss;125 kg may perform better in terms of tenderness.The appropriate slaughter weight is 125-140 kg.
