摘  要:目的:在食品添加剂作为现代食品工业重要支柱,人们却对其安全性日益担忧的背景下,探寻政府监管部门如何发挥促发展、保民生的纽带作用。方法:以水果加工品及调味品中常见添加剂为研究对象,采取调查问卷与监督抽检结果分析相结合的方式进行比对研究。结果:调查问卷结果显示,消费者对食品添加剂的安全性存在担忧;监督抽检结果分析显示,2023年度北京市水果加工品因添加剂使用不当而不合格的比例仅为0.53%,调味品因添加剂使用不当而不合格的比例仅为0.19%。说明主观风险感知与客观抽检结果存在一定的差异。结论:建议相关政府部门进一步提升主动发现食品安全风险的能力,并不断完善食品安全风险交流机制,从而增强消费者对食品添加剂使用的安全感。Objective:In the context that food additives are an important pillar of modern food industry,but people are increasingly concerned about their safety,to explore how the government supervision department can play a role in promoting development and ensuring people’s livelihood.Method:Taking the common additives in processed fruits and flavorings as the research subjects,a comparative study was conducted by integrating the questionnaire with the analysis of supervised sampling outcomes.Result:The questionnaire findings indicated that consumers expressed apprehensions about the safety of food additives,and the analysis of supervision sampling results revealed that in 2023,the proportion of unqualified processed fruit products due to improper use of additives was merely 0.53%,and the proportion of unqualified condiments due to improper use of additives was only 0.19%.There exist disparities between subjective risk perception and objective sampling results.Conclusion:It is proposed that the relevant government departments should further enhance their ability to proactively detect food safety risks and continuously refine the food safety risk communication mechanism,thereby enhancing consumers’sense of security in the utilization of food additives.
