摘  要:采用显微激光拉曼散射光谱和傅里叶变换红外吸收光谱对市售竹盐中是否存在违规添加剂进行了快速非定向检测。经过红外光谱解析与可能成分筛查,初步判定竹盐中添加了糖或糖醇类化合物;在此基础上建立常用糖/糖醇类食品添加剂拉曼用户数据库,结合样品的显微形貌与晶粒形态差异,对不同形态晶粒进行逐点拉曼扫描,从而准确鉴定出样品中添加了麦芽糖醇。本文采用的测试方法快速、简便、重复性好、准确度高,为市售各类食盐产品中违规添加剂的鉴定提供了参考。This article uses micro laser Raman scattering spectroscopy and Fourier transform infrared absorption spectroscopy to quickly and non directionally detect the presence of illegal additives in commercially available bamboo salts.After infrared spectroscopy analysis and possible component screening,it was initially determined that sugar or sugar alcohol compounds were added to the bamboo salt;on this basis,a Raman user database of commonly used sugar/sugar alcohol food additives was established.Based on the microscopic morphology and grain morphology differences of the samples,Raman scanning was performed point by point on the grains with different morphologies,accurately identifying the addition of maltitol in the samples.The testing method used in this article is fast,simple,with good repeatability and high accuracy,and provides a reference for the identification of illegal additives in various types of salt products on the market.
