摘 要:采用响应面分析法,利用超声辅助天然低共熔溶剂对胡萝卜中番茄红素的提取工艺进行优化。以番茄红素的提取率为评价指标,在单因素的基础上进行研究,选取pH、液料比和超声温度为因变量,进行Box-Behnken响应面实验设计和分析。结果表明,胡萝卜中番茄红素提取的最优组合为液料比5∶1(g/mL),含水量10%的DES[n(氯化胆碱)∶n(乙酸)=1∶2],超声温度40℃,提取时间20 min,调节pH值为3,在此条件下,番茄红素得率为18.41%。超声辅助天然低共熔溶剂对胡萝卜中番茄红素的提取有较好的效果,本研究为番茄红素的综合开发和利用提供依据。Response surface analysis(RSM)was employed to optimize the extraction process of lycopene from carrots using a natural eutectic solvent assisted by ultrasound.Based on single-factor experiments,pH,liquid-solid ratio,and ultrasonic temperature were selected as dependent variables,while the lycopene extraction rate served as an index for designing and analyzing the Box-Behnken response surface experiment.The results demonstrated that the optimal extraction process of lycopene from carrots involved a liquid-to-solid ratio of 5:1(g/mL),a water content of 10%DES[n(choline chloride):n(acetic acid)=1:2],an ultrasonic temperature of 40℃,an extraction time of 20 minutes,and pH adjustment to 3.Under these conditions,the yield of lycopene reached 18.41%.The utilization of natural eutectic solvent with ultrasound assistance exhibited a positive impact on carrot-derived lycopene extraction.This study provides fundamental insights for comprehensive development and utilization strategies about lycopene.
