摘  要:食品添加剂超范围超剂量的违规使用和有毒有害化学物质的非法添加是食品安全重点监管的领域。由于食品原料在生长过程和正常加工过程中会产生内源性的食品添加剂和化学污染物,当检出食品添加剂和化学污染物时,如何界定是人为主动添加还是天然本底,是影响结果判定科学性和准确性的重要因素。本文系统性地分析研究了食品中内源性食品添加剂和化学污染物的产生原因和本底值水平,为科学准确地进行检验结果判定提供了数据和技术的支撑,规避错判和误判的出现,切实提升食品监管工作的科学性和权威性。At present,the focus of food safety supervision is the illegal use of food additives beyond the scope and dosage,and the illegal addition of toxic and harmful chemical substances.Due to endogenous food additives and chemical contaminants produced during the growth and normal processing of food raw materials,how to define whether they are intentional human additions or natural backgrounds when food additives and chemical contaminants are detected in supervised sampling,is the important factor affecting the scientific and accuracy of result judgment.This paper systematically analyzed and studied the causes and background value levels of endogenous food additives and chemical contaminants in food,providing data and technical support for the scientific and accurate result judgment in supervised sampling,avoiding the occurrence of false positives and false negatives,and effectively improving the scientific and authoritative nature of food regulatory work.
