摘 要:为探究水果玉米在常温气调包装条件下食用品质的变化,对不同贮藏时间样品的理化指标(水分含量、气体含量、总酸、质量损失)、微生物指标(菌落总数、霉菌和酵母菌总数)、感官评定等指标进行测定分析。结果表明,随着贮藏时间的延长,在20℃气调包装中水果玉米各指标呈规律性变化,水分含量下降、质量损失上升;总酸含量、菌落总数、酵母和霉菌数在贮藏前期上升缓慢,后期上升较快,12 d时菌落总数大于10^(6)CFU/g;感官评分逐渐下降,6 d时仍符合鲜食要求;至第9天,评分为5分,不可鲜食。为进一步研究水果玉米气调贮藏的应用及贮藏过程中品质变化规律奠定了基础。In order to explore the changes of edible quality of fruit corn under the condition of modified atmosphere packaging at room temperature,the physical and chemical indexes(moisture content,gas content,total acid,quality loss),microbial indexes(total number of colonies,total number of molds and yeasts),sensory evaluation and other indexes of samples stored for different times were measured and analyzed.The results showed that with the extension of storage time,the various indicators of fruit and corn in the 20℃modified atmosphere packaging showed regular changes,with a decrease in water content and a linear loss in quality and quantity;The total acid content,total bacterial count,yeast and mold count increase slowly in the early stage of storage,but quickly in the later stage,exceeding 10^(6) CFU/g after 12 d;The sensory score gradually decreased,meeting the requirements for fresh food on the 6th day,and by the 9th day,the score was 5,indicating that it was not edible.This study laid the foundation for further research on the application of controlled atmosphere storage of fruit and corn,as well as the quality changes during storage.
