摘 要:利用基质辅助激光解吸电离飞行时间质谱(MALDI-TOF MS)鉴定熟食店熟肉中的肺炎克雷伯菌,从而了解熟食店熟肉中肺炎克雷伯菌的污染情况。随机收集30批次熟食店的熟肉制品进行肺炎克雷伯菌检测,按SN/T 1962—2007《食品中克雷伯氏菌检测方法》对样品进行增菌与平板分离,利用基质辅助激光解吸电离飞行时间质谱(MALDI-TOF MS)进行最终结果鉴定,并进行VITEK生化鉴定系统的结果比对,比较鉴定结果的一致性。结果显示:大部分熟肉中检出肺炎克雷伯菌,MALDI-TOF MS的鉴定结果与VITEK的生化鉴定结果一致。MALDI-TOF MS法能快速高效鉴定食品中肺炎克雷伯菌,可以作为食品中肺炎克雷伯氏菌检测方法的有力补充,同时肺炎克雷伯菌在熟食店中的高检出率提示该菌存在的风险,相关部门应引起重视。Klebsiella pneumoniae in cooked meat of deli by matrix assisted laser desorption ionization time of flight mass spectrometry(MALDI-TOF MS)was identification,so as to understand the contamination of Klebsiella pneumoniae in cooked meat of deli.Thirty batches of cooked meat products from deli were randomly collected for detection of Klebsiella pneumoniae.The samples were enriched and separated by plate according to SN/T 1962-2007 Method for Detection of Klebsiella in Food.The final results were identified by matrix assisted laser desorption ionization time of flight mass spectrometry(MALDI-TOF MS).The results of VITEK biochemical identification system were compared to compare the consistency of the identification results.The results showed that Klebsiella pneumoniae was detected in most cooked meat,and the identification result of MALDI-TOF MS was consistent with that of VITEK.MALDI-TOF MS method can quickly and efficiently identify Klebsiella pneumoniae in food,and it can be used as a powerful supplement to the detection method of Klebsiella pneumoniae in food.At the same time,the high detection rate of Klebsiella pneumoniae in deli indicates the risk of Klebsiella pneumoniae,which should be paid attention to by relevant departments.
