摘 要:以浓香型白酒生产过程中的原材料、副产物为基础,研制窖泥培养液,对退化窖池进行养护。采用单因素试验对窖泥培养液基础配方进行优化,在单因素试验的基础上,采用Box-Behnken法,以老窖泥添加量、黄水添加量、培养温度和培养时间为因素对培养液进行优化。结果表明,当老窖泥添加量为11.80%、黄水添加量为10.80%、培养温度为37℃、培养时间为37 d时,窖泥培养液中的己酸产率达到最大值,为7.27 g/L。将培养液对退化窖池进行实践应用,原酒中己酸乙酯含量由1.74 g/L提升至3.47 g/L。Based on the raw materials and by⁃products in the production of Luzhou⁃flavor liquor,the pit mud culture solution was developed to maintain the degraded pits.First,the pit mud culture solution was optimized by single⁃factor experiment.Based on the experiment,the Box⁃Behnken method was used to optimize the cul⁃ture solution with factors including the additive amount of old pit mud,yellow water addition,culture tempera⁃ture,and culture time.It was found that the yield of caproic acid in the pit mud culture solution reached the maximum of 7.27 g/L when the amount of old pit mud was 11.80%,and that of yellow water addition was 10.80%,with the culture temperature of 37℃for 37 d.The culture solution was then applied to the degener⁃ated pits,and the content of ethyl caproate in the raw wine increased from 1.74 g/L to 3.47 g/L.
