摘  要:采用高低温交变试验箱对黄酒样品开展老化试验,并通过测定色度、浊度指标反映酒体的稳定性。结果表明,应用高低温交变试验箱模拟黄酒储存环境并进行酒体稳定性实验具有可行性。此外,本实验通过该设备对不同焦糖色产品在黄酒体系中的性质差异进行了分析,探究了不同剂量澄清剂对黄酒酒体稳定性的影响,进一步展示了高低温交变实验箱在预判黄酒货架期稳定性方面的高效性和便捷性。In this study,Huangjiu samples went through aging test in the alternating temperature chamber,and the chroma and turbidi-ty of the samples were measured to reflect the stability of Huangjiu.The results showed that the alternating temperature chamber was feasible for simulating the storage environment of Huangjiu.The property difference of Huangjiu products with different caramel col-or liquid addition was analyzed.The influence of different dosages of clarifying agents on the stability of Huangjiu was also investi-gated.The high efficiency and convenience of the alternating temperature chamber in the pre-judgment of Huangjiu stability in shelf life was further demonstrated.
