摘  要:为探究黔北麻羊不同年龄阶段肉质性状,该研究分别屠宰4月龄、1.5岁和2.5岁黔北麻羊公羊进行肉质分析。该研究结果表明,黔北麻羊各年龄段肉色、pH值、失水率、剪切力、熟肉率和大理石纹均差异不显著,粗蛋白含量和粗脂肪含量随年龄增加而增加,2.5岁黔北麻羊粗蛋白和粗脂肪含量均显著高于4月龄,说明2.5岁黔北麻羊肉质好,风味丰富。In order to investigate the meat quality characteristics of Qianbei Brown Goat at different ages,the meat quality of Qianbei Brown Goat aged 4 months,1.5 years and 2.5 years was analyzed.The results of this study showed that there were no significant differences in meat color,pH,water loss rate,shear force,cooked meat rate,marbled grain content among Qianbei Brown Goat at different ages.Crude protein content and crude fat content increased with age.The crude protein content and crude fat content of Qianbei Brown Goat at 2.5 years old were significantly higher than those at 4 months old.The 2.5-year-old Qianbei Brown goat has good meat quality and rich flavor.
