基于超高效液相色谱同时测定白酒中丁酸和己酸的方法研究

摘  要:本研究基于超高效液相色谱法(Ultra performance liquid chromatography,UPLC)建立了测定白酒中丁酸和己酸含量的方法。结果表明,当流动相磷酸二氢钾溶液与甲醇的比例在55∶45时,丁酸、己酸可实现有效分离,线性关系良好(R2>0.9999),精密度试验结果相对标准偏差(RSD)<1.0%,丁酸和己酸的加标回收率分别在97%~98%和101%~103%之间。通过该方法可实现对白酒中丁酸、己酸的准确检测,进一步指导白酒酿造工艺的靶向调控,提升白酒风味的丰富度与饮后舒适度。In this study,the determination method of butyric acid and hexanoic acid in Baijiu was established based on ultra performance liquid chromatography.The results showed that when the ratio of potassium dihydrogen phosphate solution to methanol was 55:45,butyric acid and hexanoic acid could be effectively separated,with a good linear relationship(R2>0.9999),and the relative standard deviation(RSD)of precision test results was less than 1.0%.The spiked recovery rates of butyric acid and hexanoic acid were between 97%~98%and 101%~103%,respectively.This method can realize the accurate detection of butyric acid and hexanoic acid in Baijiu,aiming at guiding the targeted regulation of Baijiu brewing technology,and further improving the richness of Baijiu flavor and comfort after drinking.
